Finally, lunch meat without damn vital wheat gluten!
If your body tolerates vital wheat gluten fine, you do not know the struggle! It’s in pretty much every single meat replacement there is! I missed sandwich meat so I decided to make my own gluten-free version!
I decided to start with bologna, and even though it may not look like bologna, it tastes like it thanks to nutmeg! Crazy, right?!
This recipe can be taken so many places! You could make a vegan chicken version, or even sun-dried tomato, caramelized onion, vegan turkey etc. You can switch the seasonings to make pretty much anything!
I love how easy it is, you can just make a double or triple batch for the week. I would recommend making batches on different trays though so it can properly crisp up.
