Braised Tofu Sofritas inspired by Chipotle’s Sofritas!
It’s inspired by their recipe, but I wouldn’t say it’s a copycat recipe. It’s pretty damn close though! To get it more like theirs, you would have to cook down the tomatoes down to a sauce or paste before adding the tofu!
If you watch the video, you will see it’s super easy to make! And SO tasty and versatile! You could make a Sofritas Bowl, Burrito, eat it with rice and veggies, on top of a salad, or any other way you want! Straight out of the skillet, why not?
I have literally eaten Sofritas for the past week developing this recipe, and I could still eat this everyday!
You do not have to eat it with the tomatillo salsa, but it makes it even more like Chipotle Mexican Grill!
No matter which way you choose to serve this Sofritas, Guacamole or sliced avocado is a must! Unless you hate avocados, in which case how dare you? I am joking, of course….
One question I know I will get so I will answer here: Is is necessary to fry the tofu? The answer is yes. If you don’t fry it first, it would be more like a tofu scramble once everything is mixed together. You can try baking the tofu and see, but it just wouldn’t be the same!
